The project was born from Nico, Niccolò Benedetti (professional chef) and Billo, Andrea Billi (restaurateur), with real-world experience and a shared vision: to create a high-quality, solid, distinctive street food business structured like a true business.
Both have years of experience in the kitchen and share a concrete, practical, and results-oriented approach. It’s a project conceived, studied, and built step by step.
ABOUT US
Nico focuses on production: cooking, quality, recipes, standards and work organization, logistics, and supplier relationships.
He pays close attention to raw materials, procedures, and product replicability. He ensures the quality and consistency of the offering.
Billo handles project development, organization, and financial management.
He has a strong practical and organizational aptitude, overseeing strategy, numbers, and relationships with suppliers, consultants, and partners. He is the point of reference for the project’s structure, vision, and sustainability.
The Bolognesi on the Road project was born with the goal of creating a high-quality mobile catering business, deeply rooted in Bolognese gastronomic tradition, and of promoting local cuisine. The business is centered around a fully equipped food truck as the primary sales vehicle, supported by a laboratory that will serve as the operational and logistical engine for the entire operation. The laboratory is the productive, organizational, and strategic heart of the company. This hub enables the development of catering, private events, and collaborations.
The goal is to build an operational ecosystem that combines territory, quality, organization, and economic sustainability.

Our philosophy adapts to every context: for each stop of our food truck, we create a tailored menu that perfectly complements the spirit of the event, offering iconic dishes such as tagliatelle, gramigna, tortelloni, and tortellini.
Catering & Private Events
For private events and catering, we work closely with the client to create a tailor-made experience. We offer maximum operational flexibility: from the scenic presence of the food truck to express on-site cooking service, supported by our artisanal kitchen.
